Töltött paprika, aka Hungarian stuffed paprika 🌶️

I’m in a sentimental mood today… and nothing hugs the heart like these stuffed paprika. So flavorful you might cry. I definitely did. ❤️

Here’s how 💃🏻
Ingredients:
🌶️ 8 pointed peppers
🥩 600g minced meat (I used turkey)
🧅 2 onions
🌿 Celery sticks + leaves
🧄 2–3 garlic cloves
🌱 Handful of parsley
🍚 1 cup of rice
🥚 1 egg
🍅 1.5 L tomato purée
🥤 200 ml tomato juice
🌶️ Paprika powder, salt & pepper
🤎 4-5 cloves
Method:
Prep the peppers: press the stem, pull out, and clean the seeds
Sauté 1 onion in oil and set aside
Mix the filling: meat, egg, paprika, salt, pepper, parsley, minced garlic, sautéed onion & rice
Stuff the peppers
Heat oil and add a spoonful of flour and stir till golden. For the sauce: tomato purée + juice + water, salt, pepper, a tablespoon of sugar, cloves, celery & 1 whole onion
Add stuffed peppers, and with any leftover filling, roll balls & toss them in too
Bring to a boil, then simmer on medium-low for 60–70 mins
Serve with boiled potatoes & garnish with celery leaves ❤️
