Goulash / Gulyás 🌶️

Not trying to be rude, but some things are non-negotiable… The original Hungarian Gulyás is a SOUP. Case closed. ❤️ With love 🤍

Here’s how 💃🏻
Ingredients:
🥩 700g beef shoulder
🧅 2 medium onions
🍅 2 medium tomatoes
🌶 1 paprika (pointy yellow is best)
🧄 2–3 cloves garlic
🥕 3–4 carrots
🥗 2 parsnips
🌱 2 cups celeriac
🥬 1 whole kohlrabi
🥔 2–3 medium potatoes
🌿 A bunch of parsley
🍃 Celeriac leaves
🌶️ Sweet smoked paprika powder
🧂 Salt & pepper
🫒 Oil
For the dumplings (Galuska):
🥚 1 egg
🥄 2–3 tbsp flour
🧂 1 flat tsp salt
💧 Water
Method:
Chop the meat into bite-sized cubes and prep all the veggies.
Heat 1 tbsp goose fat + 2 tbsp oil in a big pot. (You can use oil only.)
Add 🧅 onions + a pinch of salt, sauté until translucent.
Add 🌶 paprika, 🍅 tomatoes, 🧄 garlic. Cook 10 mins.
Add 2 tbsp sweet smoked paprika powder (turn off heat briefly so it doesn’t burn).
Add 🥩 meat + salt, pepper, cumin. Brown on medium-high heat until sealed.
Add a splash of water, stir, cover, and cook on low for at least 2 hours (adding water as needed).
When the meat is halfway tender, add all chopped veggies + celeriac leaves. Add water to cover generously. Season to taste.
When veggies start softening, add 🥔 potatoes.
Dumplings:
Mix 🥚 egg, flour, salt + a little water until semi-solid.
Drop small pieces into the soup with a teaspoon. They’re ready when they float!
✨Finish with fresh 🌿 parsley. Stir and serve hot.
