Hungarian Onion-Crushed Potatoes 🥔🧅

One of my all-time favorite side dishes and one I cannot talk about enough. Hungarian onion-crushed potatoes are crispy, golden, savory, ridiculously simple, and proof that sometimes the humblest dishes are the best.✨

Here’s how I prepare my version of onion-crushed potatoes. With Schmalz, of course. 💃🏻
Ingredients:
🥔1 kg potatoes
🧅 2 small onions
🫒 Schmaltz aka Goose fat or oil
🧂 Salt
🟤 Black pepper
Method:
Finely chop the onions. Heat a generous amount of Schmaltz or oil in a pan, then sauté the onions slowly until soft and golden.
Meanwhile, cook the potatoes in their skins until tender. Peel them while still warm, then cut into rough cubes.
Add the potatoes to the golden onions, season with salt and pepper, then mix and roughly crush them together. Don’t mash them completely; you want plenty of texture.
Spread the potatoes across the pan and let the bottom sit undisturbed until beautifully golden and crispy.
Serve warm and enjoy this simple, genius dish. ❤️🙏🏼
