Tejfölös Uborkasaláta, aka Hungarian Cucumber Salad with Sour Cream 🥒

A forever classic and the number one side dish in Hungary, one you need in your life. 🤩

I made two versions: one creamy with sour cream and one without. Let me tell you, both will be your family’s favorite (if they aren’t already). I could honestly live on this. 🙏🏼

Here’s how 💃🏻


Ingredients:

🥒 1 cucumber

🧄 1 clove garlic

🥛 1 cup sour cream

🧂 Salt

🖤Black pepper

🌶️ Paprika powder

💧 Water

🍾 Splash of vinegar

🍬 1 tbsp sugar

🌿 Optional: fresh dill


Method:

  1. Slice the cucumber very thinly using a mandolin.

  2. Salt generously and let it rest in the fridge until it releases its juices.

  3. Meanwhile, make the spiced bath: mix 2 cups of water, black pepper, 1 tbsp of sugar, and a splash of vinegar. Stir well and let it rest.

  4. Squeeze out the cucumber juice and add the cucumbers to the spiced bath.

  5. Add the grated garlic (more if you love garlic) and dill, if using. Add some of the cucumber juice back in.

  6. Taste and adjust salt if needed.

  7. Whisk the sour cream, then fold in the cucumbers.

  8. Add a pinch of paprika powder and mix well.

  9. Garnish with dill and finish with a sprinkle of paprika.
