Here’s how I make the most flavorful Hungarian asparagus soup 💃🏻
Ingredients:
🥬 Asparagus
🫑 Half a paprika
🍅 Half a tomato
🧅 1 onion
🥕 Carrots
🌿 Parsnip
🌱 Fresh parsley
🥔 Kohlrabi
🥚 1 egg yolk
🥄 1 tbsp sour cream
🫒 Olive oil
🧂 Salt & pepper
🌶️ Paprika powder
🌾 1 tbsp flour
Method:
🔪 Chop all the veggies
🔥 Heat some olive oil in a pan
🥕 Add all veggies except the asparagus
🌾 Stir in 1 tbsp flour
🌿 Add parsley
🌶️ Sprinkle in 1 tsp paprika powder
💧 Pour in water, season with salt & pepper, bring to a boil and cook
🥬 When veggies are half softened, add the asparagus
🥣 Mix the egg yolk with sour cream, temper it with a bit of hot soup, then stir it back in
⏳ Cook for a few more minutes until everything is tender
