Barackos Gombóc, aka Apricot Dumpling 🍑

With both of my grandparents coming from the village of Gönc in Hungary, famous for its exceptional apricots, we take apricot dishes very seriously. This apricot dumpling recipe is one of my all-time favorites: close to my grandmother’s, yet so far from hers.❤️

Here’s how to make my grandmother's apricot dumpling 💃🏻
Ingredients:
🍑 Apricots
🥔 Potatoes
🌾 Flour
🍞 Breadcrumbs
🧈 Butter
🍬 Sugar
🌼 Vanilla sugar
🤎 Cinnamon
Method:
Cook the potatoes until tender. Let them cool, then peel them.
Mix sugar, vanilla sugar, and cinnamon together to taste.
Toast the breadcrumbs in butter until golden brown. Once cooled slightly, stir in a few spoonfuls of the sugar mixture.
Prepare the dough: mash the potatoes, add a tbsp of butter or oil, and gradually add enough flour to form a thick, soft dough that pulls away from the sides of the bowl.
Cut off a piece of dough and flatten it into a small pancake in your hand. Place half an apricot in the center, add a spoonful of the sugar mixture, then carefully seal the dough around it and shape it into a ball.
Drop the dumplings into boiling salted water. They are ready when they float to the surface.
Roll the cooked dumplings in the buttery, cinnamon-sugar breadcrumbs until fully coated.
