Madártej aka Floating Island 🥛

In Hungary, we call it "bird milk". Very funny. Anyway, Floating Island is one of the most well-known and liked desserts in my home country.

Here’s how 💃🏻
Ingredients:
🥛 1.5 L milk
🥚 7 eggs
🍬 150 g sugar
🍦 1 packet vanilla sugar
🤎 A few drops of vanilla extract
🥄 1 flat tbsp starch or flour
Method:
Separate the egg whites and yolks
Mix the yolks with 50 g sugar, vanilla sugar, starch (or flour), and vanilla extract
Beat the egg whites while gradually adding the remaining sugar until stiff peaks form
Heat the milk and gently poach scoops of the meringue (use an ice cream scoop or spoon), then chill them once set
Strain the milk, temper the yolk mixture with a spoonful of warm milk, then add it back to the pot
Heat gently, stirring, until it thickens into a creamy custard, then cool in the fridge
Serve in small cups with custard on the bottom, fluffy egg dumplings on top, and optionally fresh fruit
