Édes Kugli (aka Lazy Flódni) 🍰

My mother’s perhaps most popular dessert recipe. It’s non-dairy, wonderfully sweet, cozy, and nostalgic, and best of all, super easy. Perfect for sharing with guests or bringing a little comfort to the table.

Here’s how 💃🏻


Ingredients:

🥄 200 g ground poppy seeds

🌰 200 g ground walnuts

🍑 Apricot jam

🥚 6 eggs

🍦 2 packets vanilla sugar

🍬 Sugar (about 200 g total)

🍝 350g tagliatelle

🍋 1 lemon (zest + juice)

🌿 1 tsp cinnamon

🧂 A pinch of salt

🍇 Raisins


Method:

1. Prepare the fillings

1.1 Poppy seed filling:

Mix together:

ground poppy seeds

100 g sugar

zest and juice of ½ lemon 🍋

1 tsp cinnamon 🌿


1.2 Walnut filling:

Mix together:

ground walnuts

100 g sugar 🍬

1 packet vanilla sugar 🍦

zest and juice of ½ lemon 🍋


2. Cook the pasta 🍝

Cook the tagliatelle in salted water until done.

Drain and mix with a little oil and a pinch of salt.


3. Prepare the pasta mixture

Separate 3 eggs.

Mix the egg yolks with 1 packet vanilla sugar 🍦 and 2 tbsp sugar 🍬 until pale and creamy.

Add a pinch of salt to the egg whites and whisk until stiff peaks form.

Gently fold both the yolk mixture and whipped whites into the pasta


4. Assemble the layers

Grease an oven tray.

Layer in this order:

1️⃣ ⅓ of the pasta

2️⃣ Apricot jam 🍑

3️⃣ Poppy seed mixture

4️⃣ Raisins 🍇


Next layer:

5️⃣ Pasta

6️⃣ Apricot jam 🍑

7️⃣ Walnut mixture 🌰

8️⃣ Raisins 🍇


Finish with the final layer of pasta.


5. Bake at 180°C (350°F) for about 1 hour.


6. Finish with the topping ☁️

Beat 2 egg whites with sugar until fluffy.

Spread the baked kugli and return it to the oven until the top turns lightly golden.

Let it cool slightly before slicing.


It’s sweet, nutty, yummy, and incredibly comforting ❤️
